Quick Glazed Carrots with Walnuts

Thanksgiving is THIS WEEK, y’all!!! Have you planned your meal yet? We’re not hosting, so I’m only bringing a few things. But when Logan asked me to whip up something for his office Thanksgiving party, my mind immediately went to glazed carrots.

The great thing about glazed carrots is that they’re one of those vegetables nearly everyone likes, even the kids. Plus they’re delicious at room temperature, so perfect for a work potluck where the food may not all arrive at the same time.

The recipe itself is easy: the most time-consuming part is chopping carrots!

Glazing carrots is an age old technique, but I got the walnuts idea from How to Cook Everything.

Quick Glazed Carrots with Walnuts

Ingredients:

  • 1 pound (usually one bag) carrots
  • 1/2 cup onion, diced
  • 2 tbsp olive oil
  • 1 tbsp brown sugar
  • 1 cup walnuts
  • salt & pepper

Steps:

  1. Cut the carrots into sticks or coins. I like coins because they cook a little faster and seem to feed more people, but it’s really up to you as long as all the pieces are roughly the same width.
  2. In a small to medium pot, combine the onion & carrots with olive oil. Season with salt & pepper. Pour about 1/2 cup water over the top, then bring to a boil.
  3. Once it’s boiling, cover and turn down to a simmer. Cook for 10-15 minutes, until the carrots are nearly tender and the water is nearly gone.
  4. Uncover and let the remaining liquid boil off. Stir in walnuts and serve!

See? So easy! It’s also an easy recipe to expand: add your favorite spices, or double it (like I did in the photos) to feed the whole office.
