Berry chia seed pudding is my latest obsession. Move over smoothies, chia is taking over! They’re delicious, easy to make, and surprisingly filling for their size.

The thing I love most about these chia seed puddings is that they’re versatile. You can eat them for breakfast, as a snack, and even as a dessert. And let me just say that I’m not one who thinks that a piece of fruit is an acceptable dessert. I love fruit, but that’s not enough to be dessert on its own, people! But these genuinely work. they feel like a prepared treat rather than just eating an apple.

Berry Chia Seed Puddings taste like a fruity pudding. The texture feels luxurious. It has the fun bubbles like teeny tiny boba, but they’re balanced with plenty of the coconut cream to add smoothness admist the chia seeds. It tastes like a sweet fruity dessert! So I’m happy to eat it as dessert.

This isn’t a recipe of my invention: it’s 100% from Good and Simple, by Jasmine and Melissa Hemsley. A friend gifted me their cookbook for Christmas one year and I have loved pouring over it! They’re a British sister duo who advocate real food and mostly plants without being judgemental about it.

A bonus is that many of their favorite ingredients are much more available in Italy than they were in rural Oklahoma. Looking at you, celeriac and chestnuts.

Back to the recipe: it’s delicious. It’s super easy to prepare and just needs to sit overnight to come together.

You can use whatever berries you’d like in the mixture. For this particular batch I used equal parts strawberries and raspberries, but I often mix it up with blueberries or blackberries or whatever’s on hand. Darker berries will make the color more vibrant – at times it ends up purple.

I do recommend using frozen fruit. You can go fresh or frozen for this, but I find that frozen helps it set faster if you’re jonesing for some chia seed pudding, and those bags of frozen fruit are way cheaper than using fresh. (Side note: this is another thing that Italians don’t do. Frozen fruit doesn’t exist in Italian supermarkets. I either buy frozen at the commissary or use fresh from the market.)

Let’s talk toppings: we love them. You can pile these things with whatever you want. My go to is sliced strawberries and goji berries, but if I’m eating this as dessert I’ve been known to top with a few chocolate chips.

Did I mention how easy they are to make? Dump everything in your blender, mix it, and pour into bowls to set for a few hours or overnight. Done. Why can’t more delicious snacks/desserts be like this??

Another bonus is that they’re more filling. I can eat one as a snack if I know I’m still hours from my next meal, and it always holds me over. They look small, but those chia seeds manage to help you feel full!

Berry Chia Seed Pudding

Ingredients

  • 1 can coconut milk 14 oz
  • 9 oz fruit frozen
  • 6 Tbsp chia seeds
  • 2 Tbsp vanilla
  • Tbsp honey
  • 1 pinch salt
  • 1-2 Tbsp Goji berries
  • 2 strawberries sliced

Instructions

  • Combine coconut milk, frozen berries, chia seeds, vanilla, honey and salt in a blender. Blend until evenly combined.
  • Transfer to four individual bowls and refrigerate overnight to set.
  • Immediately before eating, top with strawberries and goji berries!

Lately, you can always find these beauties in my fridge. They’re perfect to grab at a moment’s notice for a quick treat!
