For most people fall symbolizes that time that the temperatures start dropping and we bust out the sweaters. But in North Carolina, fall meant the start of football season and two months of unpredictable weather that mostly stayed warm. I remember wearing shorts for Halloween some years, no problem.

So as I started to brainstorm delicious things to create for fall, I knew I wanted to make a cocktail that tasted like fall but wasn’t a hot drink. Clearly, I’m not the only one who thinks of it that way too (looking at you, Starbucks pumpkin spice cold foam.)

And seeing as I now live in Italy, I’m putting an Italian spin on the ingredients!

This drink has Italian connections in two ways. The first is obvious: I live a mere 20 miles from Prosecco Road, so I wanted the base to be prosecco! It is one of my absolute favorite parts of living in this region, and I’ll be sharing some more soon on some of the best vineyards.

Apples are an obvious choice for a fall drink, but in Italy pears are more commonly found in the fall. Yes, there’s always apples, but this area seems to specialize in producing some of the best pears I’ve ever tasted and quite a few variations I’ve never heard of! Pear juice is also just as commonplace in Italian supermarkets as apple juice, and it is a thing of beauty. I’m not a big juice drinker in general but this stuff is amazing!

Please please please do yourself a favor and don’t skip the cinnamon stick! It adds that essential warming spice that you crave in the fall, and balances out the sweetness of the apple cider. There’s just no substitute.

Usually, I don’t care what kind of glass you use for a drink, but I do think the shape of a wine glass allows the cinnamon stick to do its thing better and capture the scent as you take a sip.

Tools you’ll need: knife, cutting board, jigger or measuring glass, and wine glasses.
