Apple crisp (with gluten free option)

This year my friend Sage joined our family’s thanksgiving, and she’s allergic to gluten. Most dishes on our table were already gluten-free so dinner didn’t need adjusting. That being said, dessert is pretty gluten-full at our place (we love pie). I wanted to make a “traditional” dessert that was also gluten-free, but I didn’t want  to use too many weird ingredients either. So after exploring some options, I came across this apple crisp recipe! It’s delicious, and I did a bit of tweaking to make it my own.

The fun thing is that to make it gluten-free, all you do is substitute oat flour or gluten-free flour. It tasted great – I’m pretty inexperienced with gluten-free desserts, but it tasted like good homecooked apple crisp. One fun thing about this recipe is you can stretch it pretty far: the deeper the dish you start with, the more apples can go in. They cook down a bit while you bake, so feel free to load them up!

The star ingredient. For the record, this is way too many apples. I used 2 big granny smith and 6 tiny gala apples. There’s enough apples here to make two apple crisps!

Peel & slice the apples. I’m not usually concerned with getting them perfectly peeled or sliced exactly the same.

Grease a 9×9 dish and throw all your apples in there. Make sure to mix the gala and granny smith together if you’re using two types.

In a mixing bowl, combine sugar, flour, and oats.

Add yours spices!

When the dry ingredients are combined, cut the butter into small pieces and work it into the mixture. You can use your hands for this if that’s easier.

Sprinkle the mixture over the apples and bake for 30 minutes!

Apple Crisp

Ingredients:

  • 6-8 cups apples, sliced thin (or more!)
  • 6 tbsp unsalted butter, softened
  • 1/2 c old fashioned rolled oats
  • 2/3 c light brown sugar
  • 1/2 c all-purpose flour (for gluten-free, sub oat flour or gluten-free flour)
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt

Steps:

  1. Preheat the oven to 375°F. Grease a 9×9 dish with butter.
  2. Distribute  the sliced apples evenly in the dish.
  3. Combine sugar, flour, oats and spices in a bowl. When mixed, cut the butter into small pieces and add to the bowl. Use your fingers or a spoon to make the butter and mixture combine – the process reminds me a little of beginning stages of biscuit dough.
  4. Once the butter has been fully incorporated into the mixture, sprinkle over the apples and bake for 30-32 minutes.
  5. If cooking in advance, I throw it back under the broiler for a couple minutes right before serving to give it a bit more “crisp.” Plus, these dishes are always the best served warm!

At our thanksgiving, we were so excited about all the desserts that no photo evidence exists before we demolished them. So here’s one more closing shot of tasty fall amazingness.
