I adore champagne. If I could only drink one alcoholic beverage for the rest of my life, it would be champagne. It’s dry but not too dry and the bubbles make add a festive feel to anything.

So for the party I’m hosting this New Year’s Eve, I wanted to create a champagne-based cocktail. Something with an added punch of flavor to mix up the classic NYE drink. So I played around a bit and came up with a pomegranate champagne cocktail!

When you add pomegranates to champagne, they move in this mesmerizing slow float up and back down, slower than the bubbles. It looks like rubies are in your glass, giving it even more of a glammed up feel. Add a bit of pomegranate juice for tartness and St. Germain to sweeten it up, and you’ve got a fantastic sip for the night!

Like any good cocktail, you can play with the ratios to suit your tastes. I wanted a drink that’s a little sweet but not overwhelmingly so, something light. I measured the juice and St. Germain into my champagne glasses, then topped it with bubbly.

You can easily make this sweeter with more St. Germain or start with a sweeter champagne. I used Brut here, but you can certainly go sweeter if that’s what you typically like.
