One of the best things about Christmas parties is the food. Seriously, people pull out all the stops for their holiday dishes. Potlucks are even better – 20 people bringing their favorite means that I usually don’t eat dinner before these shindigs, just fill up on artichoke dip and sausage balls and red velvet cake.

When one of my best friends invited me to her Christmas party, I knew I wanted to bring something that was easy to eat off a party plate and gluten-free. She lives about 90 minutes away, so it also need to travel well.

Enter: pumpkin dip. It’s crazy easy to pull together and you can dip just about anything into it. The flavor is smooth, sweet and light, which lets it offset the mostly heavy food that ends up being consumed at Christmas parties. Best of all, it takes about 5 minutes of actual prep time. It’s based on this recipe, but with a tweak or two.

This is how easy this recipe is. Buy three things from the grocery store.

Cool whip.

Add the pumpkin, pudding mix, pudding mix powder, and pumpkin pie spice.

With this as your basis, you know it’s going to be good.

Stir well!

I added some more pumpkin pie spice for a little more flavor.

Let it sit in the fridge for a couple hours – helps the flavors meld into each other. Sprinkle the top with cinnamon right before you serve, and voila!

Slice some apples and toss some pretzels, graham crackers, or Nilla wafers on a plate as dippers, and you have a winner!

Merry Christmas!

Pumpkin Dip

Ingredients

  • 15 oz can pumpkin
  • 5 oz instant vanilla pudding mix (just the powder, don’t make pudding!)
  • 16 oz cool whip
  • 3/4 tbsp pumpkin pie spice
  • liberal sprinkling of cinnamon

Steps

  1. Mix cool whip, pumpkin, and vanilla pudding powder in a bowl. Add pumpkin pie spice and mix well.
  2. Chill for a couple hours before serving.
  3. Serve with apple slices, Nilla wafers, graham crackers (honey and/or chocolate), or anything else that suits!
