Perfect Roasted Vegetables

These roasted vegetables are easy to throw together for a weeknight meal. We eat them at least once a week and never get tired of them. Best of all, you can mix them up for inifinite variations!

These roasted vegetables are weeknight staples. They’re mindless to make, so even after a long day I can put on some good music to chop veggies, set a timer and walk away! It’s also a great way to use of vegetables that are on the verge of spoiling – this method will work with anything.

The only problem with them is that we never seem to make enough! I’ll do three trays’ worth, as much as my oven can hold at one time, and just the two of us manage to eat 80% of them. Which is a good problem: we love them so much it’s easy to eat our veggies!

Sometimes we’ll make a whole bunch of these on Sundays for weekday lunches. They’re perfect because they taste just as good lukewarm on a salad or grain bowl as they do hot with a main dish!


There’s two ways to do this. The first is more foolproof, and may make those of us who like things to be done evenly happy. The second works for those of us who like to just get it done without bothering to measure anyway. I used to do the exact method, but then realized I’d rather skip a step and eyeball everything. They’re just as good either way!

You can use any combination of vegetables and spices that make you happy. I’ve listed our favorite standbys to get you started. Just keep in mind that thicker and more fibrous veggies may take longer to cook. Either cut them smaller or adjust your cooking time; feel free to experiment and get the perfect level crisp-tender you want!

Perfect Roasted Vegetables

Makes enough for 2-3 people. Spice measurements are meant as a starting point, do it to your preferences. 

Ingredients:

  • 2 heads of broccoli, cut into small florets
  • 1 lb carrots, cut into sticks
  • 2 onions, cut into thick chunks (it’s fine if the layers aren’t separated)
  • 2-3 tbsp olive oil
  • 1/2 tsp salt
  • pinch pepper
  • (optional) 1/2 tsp garlic powder
  • (optional) 1/2 tsp paprika
  • (optional) 1/4 tsp chili powder
  • (optional) pinch or two cayenne

Steps:

Exact process: 

  1. Preheat the oven to 430°F and cut vegetables.
  2. Split olive oil into two gallon sized ziploc bags. Add vegetables into them.
  3. Shake so vegetables are coated. Split spices between the two bags, then shake again.
  4. Distribute onto baking sheets. I need about 3 for this many vegetables.
  5. Roast for 12-14 minutes, then flip with a spatula. Roast 10-12 minutes more.
  6. Serve and eat!

Loose process: 

  1. Preheat the oven to 430°F and cut vegetables.
  2. Coat 2-3 baking sheets with olive oil. Spread chopped vegetables on them.
  3. Add another bit of olive oil on top of the veggies. Maybe toss them with your hands, maybe not.
  4. Sprinkle spices on each tray.
  5. Roast for 12-14 minutes, then flip with a spatula. Roast 10-12 minutes more.
  6. Serve and eat!
