If you have a juicer: Follow juicer instructions to juice the pineapple chunks.
If you don't have a juicer: Put the chunks and water into a blender and liquefy. Strain the pineapple through a sieve over a pitcher so you end up with just the liquid. Discard the pulp.
Add the lime juice and simple syrup and stir to combine.
Immediately before serving, add 2 cans of sparkling water and ice.
