Instructions
Boil your eggs as you like them - soft boiled is my favorite, but hard boiled is easy for a week's worth of meal prep.
Meanwhile, thinly slice cucumber and strawberries and dice the pepper.
Assemble your salad: top the spinach with vegetables, pistachios and eggs. Finish off with poppyseed dressing and enjoy!
