Peel the lemons, removing as much of the white layer from the peel.
In a large bowl, combine the alcohol and lemon peels. Cover and soak for 5 days.
Make simple syrup with the water and sugar: combine the water and sugar in a small saucepan and heat on low, stirring occasionally, until sugar is dissolved and slightly thickened.
Add the simple syrup, re-cover and soak for three more days.
After three days, taste the liquid. If the lemon flavor isn't strong enough, cover and let sit another two days.
Remove the peels and strain the liquid through an old t-shirt. Bottle and let sit for another two days.
After the final two days, it's ready to serve! It's normal for some foamy bits to come to the top, just scrape off. Store in the fridge or freezer and serve cold.
