1lb Italian sausageor breakfast sausage, removed from links if necessary
2onionsdiced
5celerysticks, cut thin
1/2cupbutter1 stick
2eggs
2cupschicken broth
2tspsagedried
1tspthymedried
1tsprosemarydried
1/2cupparsleyfresh
1/2tspsalt
1/4tsppepper
Instructions
Cut the bread into 3/4 inch cubes and leave out overnight to get stale. You can also start with stale bread here.
Preheat the oven to 300°F and toss the bread onto a baking pan. Cook for 15 minutes, toss and cook for 10 more. You want it to be nearly croutons. When it's done, set aside and heat oven up to 350ºF.
While the bread crisps, heat a large skillet and brown the sausage, breaking the meat into bits with a spatula as it cooks. When it's fully browned, transfer to a bowl and set aside.
In the hot skillet, melt the butter and add onion and celery. Saute for 10 minutes, stirring regularly.
Add the bread and the veggies to the bowl with sausage. In another smaller bowl, combine the beaten eggs, broth, and seasonsings. Once combined, pour over the bread mixture and stir gently but thoroughly.
Bake 30 minutes covered with foil, then another 20-30 minutes until bread is browned on top and a thermometer reads 160ºF when inserted.
